There are now on the Register in the Borough 142 butchers'
shops (including 30 Kosher butchers), GO butchers stalls, mostly
in the market streets, 46 butchers' stores used by stallholders for
the storage of meat, 28 provision shops where meat is sold from
open fronts. There are 93 food rooms in connection with the
above premises where meat is prepared and cooked.
Food Sampling.—37 informal samples of food were purchased
or obtained for examination or analysis as to soundness or
adulteration. These included:—

Tea 15 Lemonade 1
Butter 9 Chocolate 2
Cream 1 Cheese 1
Flour 1 Minced Meat 1
46 samples were taken under the Food and Drugs Act for
analysis.
Screening of Meat exposed for sale.— The screening of meat
on stalls and shops, as far as it can be enforced under the Meat
Regulations, has been on the whole fairly maintained by the shopkeepers.
The stallholders require constant supervision, especially during
their busy periods.
One Summons was issued for exposing meat to contamination
and the trader fined £5 and costs.
New butchers' shops are being opened with open fronts in the
busier streets.
Storage of Meat.—A large proportion of the butchers now
have refrigerators to keep their stocks in, and others are gradually
having them fixed.
Prosecutions for Unsound Food.—Five summonses for exposing
and depositing for sale unsound meat were issued, and the
vendor fined £25.
