During recent years there has been a tendency far ice-cream
to be marketed by a few companies with adequate facilities for maintaining
the high standard required for this product. This trend has culminated
in the merger of some of the biggest producers, leaving few competitors
in the field of bulk production and retail distribution. This simplifies
sampling procedures but does not necessarily reduce the need for vigilance.
A feature of this trade which is viewed with some ccticern is the
public demand for a soft ice-cream, which, unlike wrapped ice-cream is
made at the point of sale and is liable to be contaminated.
PREPACKED MEAT PRODUCTS
During the year 7 samples of meat and ham products were submitted
for bacteriological examination fraa a shop in the Borough which had .just
commenced pre-packing this type of food.
All were reported upon as being bacteriologically satisfactory.
