Qualitative Analysis
The number of milk samples submitted to the public analyst for
chemical analysis was 189 of which 24 were "Channel Island" milks. The
latter are required to have 4% fat as against the legal minimum of 3%
for ordinary milk. All complied with the prescribed standards. The
average fat and non fatty solids content of the 24 "Channel Island" and
"South Devon" milks was 4.4% and 8.91% respectively. That of the
165 ordinary milks 3.57% and 8.66%.
Ice Cream
Ninety-eight samples of ice cream were examined for bacteriological
purity and as in the past three years all were found to be of the highest
grade—grade I.

The following is the analysis of the result of sampling since this system of bacteriological grading was first instituted in 1947:—

Twelve samples of ice cream were analysed by the Public Analyst for
quality and were reported as satisfactory.
Ice Cream (Heat-treatment, etc.) Regulations, 1959
There are no manufacturers of Ice Cream in the district all the
registered retailers drawing their supplies from reputed manufacturers
outside the district.
All retailers are provided with refrigerator cabinets which maintain
a temperature well below 28°F. in accordance with the regulations.
Bacteriological Examination of Other Substances
One sample of Meat Pudding and one sample of Creamed Rice
were sent to the bacteriologist for examination and found to be satisfactory.
