To comply with the Milk (Special Designation) (Pasteurised
and Sterilised Milk.) Regulations, Tuberculin Tested (Pasteurised)
and Pasteurised Milk must not give a reading of more than 2.3
Lovibond blue units In the phosphatase test andmust not decolourise
methylene blue In 30 minutes. Of the 96 samples examined under
these Regulations not one failed the test.
BACTERIOLOGICAL SAMPLING 0F ICE CREAM
During the year seventy two samples of Ice cream were
obtained for bacteriological examination and provisional grading.

The following table shows the 1957 percentage results in each grade and for comparative purposes the results obtained in 1956.

It is most gratifying to record that 98.61.% of the samples
were placed in grades 1 and 2, none in grade 3 and only one in
grade 4.
