Desiccated Coconut.
Arising out of the receipt of a letter from a large firm of Bakers
and Confectioners in a neighbouring borough, six samples were taken from
bakehouses in this district of desiccated coconut. With one exception
all samples were satisfactory and the unsatisfactory sample referred to
fine desiccated coconut in which salmonella newport was shown to be
present. The bacteriologists stated that this product should not be
used unless it was heat treated and these instructions were passed on
to the bakers concerned.
