(b) Bacteriological Examination.
Ice Cream. Selective sampling was carried out so that,
as far as possible, all manufacturers were included. Furthermore,
the samples were taken from dealers selling unwrapped ice cream
when the risk of contamination is at its highest.
26 samples were taken and 24 were Grade I or II, which
is very satisfactory. One was reported as Grade III which is
'fair' and the other was Grade IV, which is unsatisfactory. No
faecal coliforms were detected.
The dealers selling ice-cream Graded III and IV were
visited and instructed in hygienic methods of storage and service.
Repeat samples were satisfactory.
Other Foods. Only 4 samples were taken. 2 were of
salted beef and brine. The result showed that both were bad,
proceedings were instituted and convictions obtained. The other
2 were taken in an investigation into food poisoning, but negative
results were obtained.
