The results of these samples were as follows: —

The results of the methylene blue test divide ice-cream into
four grades. If ice-cream consistently fails to reach grades 1 and 2
in the test, this is regarded as indicating a defect of manufacture or
handling which calls for further investigation.
Repeated visits were made to premises from which unsatisfactory
results had been received, and communications were sent to the
Medical Officers of Health of the areas in which the ice-cream was
manufactured.
In one case where unsatisfactory results had been obtained for
some time, particularly searching investigations were carried out.
These investigations included the taking of ten samples over a period
of two days, from all stages of the process between the delivery of
the mix from the factory and the production of ice-cream in the
server ready for sale to the public. In all these ten a Grade 1
standard was attained, indicating that with constant attention to detail
satisfactory results were possible in this case.
These, and other premises from which unsatisfactory results
had been received, were still under careful supervision at the end of
the year.
Eight applications for registration for the sale of ice-cream were
received, and registration was granted in all cases.
One application was received for the registration of premises for
the manufacture of ice-cream. Registration was deferred pending the
carrying out of alterations to the premises,. These alterations had not
been completed at the end of the year.
One registration for the manufacture of ice-cream was cancelled
during the year, the use of the premises for this purpose having
been discontinued.
In all, 194 visits were paid during 1950 to premises where the
manufacture or sale of ice-cream was being carried on.
