The Milk and Dairies Order, 1936.
Much attention was again directed to this Order during the
year with a view to minimising the risk of contamination, infection
and adulteration of the milk supply to the Town.
The Milk (Special Designations) Order, 1936.
The number of licenses granted for the sale of Milk under
Special Designations classified in the above Order was as follows :—

Dealers' Licences.

In respect of Tuberculin Tested Milk, 2; Pasteurised Milk, 2.
Ice Cream.
Under the requirements of the Essex County Council Act, 1933,
all Ice Cream Vendors or Manufacturers in the Town must be
registered.
There are 196 Vendors of Ice Cream in this Town, the majority
of whom sell a proprietary article.
During the year registration was granted in 60 cases, and
refused in two instances.
In May and June 45 samples of this commodity were taken
and submitted for analysis on fat content, and 41 samples were also
submitted to bacteriological examination.
The results of the above analyses—ranging from 1.1 to 13.1 per
cent. fat content showed, on the whole, a very poor standard. The
bacterial counts ranged from 300 to 370,000 per millilitre, and of
these only seven were above 100,000 per millilitre.

The following table indicates the low fat contents of the samples submitted :—

Following these analyses, I interviewed all Vendors of Ice
'Cream whose commodity showed a very poor fat content and/or
where cleanliness was apparently lacking—in all, 36 Vendors were
interviewed and subsequently samples were obtained of their
commodity.
