INSPECTION AND SUPERVISION OF FOOD.
(a)—MILK SUPPLY.
During 1930 4 persons were removed from the register
of Dairies owing to business changes. Five dairymen were
added to the register making a total of 41 on December
31st, 1930, compared with 40 for the corresponding date in
the previous year. There is only one cowkeeper in the
Borough.

No licences have been issued to producers in the Borough in respect of Graded milk, but the following licences have been issued to dairymen:—

By far the greater part of the milk sold in the Borough
is contained in bottles, but a few retailers continue to send
out milk in churns and hand cans for delivery on the second
round. It is hardly necessary to say that the use of cans,
etc., in the street is undesirable and is discouraged whenever
opportunity occurs.
There is a fair sale for sterilised milk and, of course, a
marked proportion of the total milk sold in the Borough is
pasteurised, but it is doubtful whether the average housewife
knows exactly what class of milk she is buying. Certainly
there is very much confusion in the public mind as
to which of the several grades of milk is the best and safest,
and this doubt is probably due to the official recognition
given to various designations under which certain milk
may be sold. It might easily be thought that "Grade A"
milk would be the highest grade, but it is not, and I am
of opinion that this fact should be made perfectly clear
