127 86Egg Substitute ButterConsisted of coloured baking powder, made from cornflour, rice flour, potato starch, yellow colouring and a bicarbonate-phosphate raising mixture. The articles were described as a "Perfect Substitute" for eggs. Since they did not contain the nutritious qualities of eggs and were unsuitable for many of the purposes for which eggs are used, this description is misleading. Water, 16.9 per cent.

The label claimed that one teaspoonful with five of water was equal to the juice of one lemon. The juice of one fresh lemon of aver-size normally contains citric acid, 3 gms.; Vitamin "C," 450 units; with sugars, mineral salts and other constituents.
