These premises have been systematically inspected during
the year and the necessary notices served to remedy the
insanitary defects discovered. At the annual licensing
sessions of slaughterhouses of the London County Council it
was not found necessary to oppose any of the existing licenses;
The premises are maintained in a fairly satisfactory condition.
Inspection of premises where food is prepared for sale or sold.
226 inspections of these premises were made during the year,
compared with 129 in 1920.
Vendors of Fried Fish. At the end of the year there were
65 premises where the business of a vendor of fried fish was
carried on. These premises were specially inspected during
the year by your Chief Sanitary Inspector and myself, the
defects found by us being "followed up" by the district
sanitary inspectors, and the necessary action taken by them.
These businesses, in the nature of things, show many unsatisfactory
features, and it is essential that scrupulous
cleanliness should be observed by the workers in order to
prevent accumulations of offensive material collecting in
those parts of the premises likely to be soiled; that the
premises used for this purpose should be properly constructed;
that proper arrangements should be made for the disposal of
offensive and decomposing material; and that the fact that
food for the use of man is being prepared and sold is not lost
