The quality of the milk sold in the Borough was, as usual, the best in
the last months of the year. It will be noted that the average percentage
of solids-not-fat during the month of January is less than the legal minimum.
This abnormal figure is due to the fact that, out of the 95 samples examined
in January, 24 were adulterated.
The yearly averages, including adulterated samples, are given in the
following table:—

Hospitals, etc., Samples.— 28 samples of milk were taken on delivery for
chemical examination from various institutions in the Borough. The average
composition of the milk was:— Fat, 3.59 per cent., and solids-not-fat 8.72
per cent.
School Samples.—37 samples of milk were taken on delivery at schools
in the Borough. The average composition of the samples was:— Fat 3.55
per cent., and solids-not-fat 8.73 per cent.
Bread and Butter.—69 samples, consisting of either bread and butter
or rolls and butter, were examined. Of these 4 samples of bread and butter
and 8 samples of rolls and butter were adulterated.
B 95. Rolls and butter (Informal). The fat consisted of margarine.
B 96. Bread and butter (Informal). The fat consisted of margarine.
B 104. Bread and butter (same vendor as B 96). The fat consisted of
margarine. Vendor fined £2 with £2 2s. 0d. costs.
B 222. Rolls and butter (Informal). The fat contained 40 per cent, of
margarine.
B 240. Rolls and butter (same vendor as B 222). The fat contained at
least 15 per cent, of margarine. Vendor fined £5 with £2 2s. Od.
costs.
B 485. Rolls and butter (Informal). The fat consisted of margarine.
B 492. Bread and butter (Informal). The fat consisted of margarine.
B 520. Rolls and butter (same vendor as B 485). The fat consisted of
margarine. Vendor fined £1 with £2 2s. 0d. costs.
B 519. Bread and butter (same vendor as B 492). The fat consisted of
margarine. Vendor fined £2 with £2 2s. 0d. costs.
B 665. Rolls and butter (Informal). The fat consisted of margarine.
