Notes on Table D.
During the early part of the year a large number of samples were submitted
which showed only slight amounts of water. These samples were all
traced to wholesale sources. During January and February there were 20
samples showing by the Hortvet freezing point test a minimum of added
water ranging from 1.1 to 4.2 per cent, of added water, also by the same test
11 other samples showing a minimum figure of less than 1 per cent, of added
water. There seemed to be no doubt that the milk supplied by these firms
was being consistently adulterated and although the amount of water shown
was small it was decided to take legal proceedings in the hope of putting a
