added water, up to 10 per cent. The Medical Officer of the district in which
the farms were situated, was communicated with and it is pleasing to relate
that with his co-operation and that of the Company, the quality of the milk
delivered to shopkeepers and schools in Stepney by this company has shown
a decided improvement.
The number of dairy premises during the last three years has decreased
by 138 and the number of persons selling milk in sealed bottles and cartons
has increased by 110. Every effort has been made to induce dairymen carrying
on business upon unsatisfactory premises to change over to bottled milk, and
this has met with great success. There is a tendency in this Borough for
many different kinds of shops to sell milk in sealed bottles and the number
on the register is 414. It is also noted that the sale of milk in cartons is on
the increase.
The inspection of ice cream premises claims a large part of the Food
Inspectors' time during the summer months. In addition to the 366 premises
where ice cream is manufactured and sold, much ice cream is sold from stalls
and vehicles in the public streets, and these, of course, are also subject to
inspection. Two summonses were issued in respect of dirty utensils and the
vendors were fined.
Seven summonses were issued against persons carrying on the business
of dairymen without being registered.
