fresh meat. It is illegal for a provision merchant to sell margarine as butter,
or without a label clearly stating the nature of the article. Why should
butchers be placed in a more favourable position ?
Offal arrives in crates from Holland at our wharves. Upon arrival the
offal is taken from the open crates, placed in hampers and then forwarded to
the consignees.
The ships that import the offal arrive at the wharves according to the
tides, but the offal is not dispatched until about 2 a.m., in time for the market.
At other times, the offal is transferred directly from the ships to the carriers'
vans.
Other offal is landed from the Continent and delivered by the Great
Eastern Railway Company to Bishopsgate Street Station.
It is most difficult to be certain of the wholesome condition of the offal,
unless each organ is carefully examined. Taking into consideration the time
of arrival and delivery it will be seen that this is practically impossible.
