ICE CREAM
The majority of the 120 premises that are registered for the sale of ice
cream sell prepacked varieties of the well known reliable brands. Where
ready mixed gallon cans are supplied necessitating the use of servers it is
here that contamination takes place and is responsible for the reports from the
laboratory of low grades Re visits are made and methods introduced to ensure
improved standards
The Standard of Soft Ice Cream from the two machines has been maintained
at a satisfactory level.

The new designations for milk are now Pasteurized Sterilized and Untreated
One distributing centre in the Borough which deals in a small quantity of raw
milk was required to re register but under provisions contained in the new
regulations, the re registration of dealers selling milk other than Untreated
may be postponed until normal expiry of existing licences There were,
however the following number of licences issued this year -

The taking of milk samples to the exclusion of other foods has always been
considered to be in conflict with good sampling policy especially when the
fact is realized that all milk distributed in Shoreditch is processed at three
dairies
