Grade I: 94 (75.8%)

The goal of all samples being at least no lower than Grade II is not
one of easy attainment: it must be realised that the large manufacturers
are in a position to maintain a constant bacteriological control right
through production and throughout the day's working, a facility that is
beyond the means of the smaller man.
In addition to the above, thirty samples of ice-lollies were dealt
with. The Methylene Blue Test is not employed on these: their acid
nature renders them self-sterilising and an assessment of the hydrogen ian
concentration of a sample indicates its degree of acidity. All were
satisfactory.
There are also forty-one premises registered for the storage and sale
of ice cream, after allowing for one new registration effected during 1958,
and two cancelled; one following closure of the premises and one following
change of user.
DAIRIES. COWSHEDS AND MILKSHOPS.
The control of the production of milk is vested in the Ministry of
Agriculture Fisheries and Food.
The local authority is responsible for the inspection and registration
of milk distributors and other dairy premises not directly concerned with
the actual production of milk, and for licensing for the sale of Designated
Milks.

Twenty-four samples of milk have been taken, in course of delivery to the consumer, and submitted to the appropriate tests with the following results:-
