During the year 1938 it has not been necessary to take any prosecutions. The 264
contraventions recorded were of a minor character, and the forwarding of cautionary letters,
where necessary, produced the desired improvement. It is gratifying to note that the .
number of contraventions has fallen by 182 on last year's figures.
Butchers' shops and depots used as distributive centres by multiple restaurants are
the subject of constant supervision, and whilst the standard of cleanliness in these premises
is generally good, many improvements have been made.
The premises used for the manufacture of sausages and meat products within the City
are conducted in a satisfactory manner, and the installation of modern machinery and
equipment show a genuine effort to bring their, in many cases, old-fashioned premises upto-date,
and a desire to produce these foods in as hygienic and cleanly a manner as possible.
The general improvements during the year are the result of co-operation between the
meat traders and transporters and the officers of my department.

Note.—Some of these premises are registered for more than one of the above processes.
The action taken under this Act has improved the standard of cleanliness in many
businesses. Before premises are registered, a schedule of alterations and improvements is
submitted, where necessary, to the applicant. When the improvements have been carried
out, a standard capable of maintenance results.
The number of premises registered during 1938 is 21, and 13 premises were removed
from the register, the occupiers having removed or discontinued in business. One premises
was considered unsuitable for satisfactorily conducting the type of business for which
application for registration was made. There is now a total of 135 premises on the register.
SUPERVISION OF THE ICE CREAM TRADE.
During the summer season, 98 inspections have been made in connection with the
manufacture or sale of ice cream at the 67 premises now registered in the City, and 44
inspections have been made of the barrows or stalls of itinerant vendors, who this season
numbered 19.
In all instances where lack of cleanliness or other breach of the requirements of the
Act were observed, the issue of a caution has resulted in appropriate steps being taken to
remedy the defect.
ITINERANT VENDORS OF FOOD.
(Other than Ice Creaam).
The new Bye-laws for the protection of food, made under Section 183, of the Public
Health (London) Act, 1936, and which came into force on the 1st of February of this year,
have given increased powers to enforce the sanitary and cleanly conditions of food exposed
for sale, and as a consequence many improvements have been made.
During the year 58 inspections have been made of the barrows, etc., of itinerant vendors
of fruit and confectionery, and where unsatisfactory conditions existed, the issue of cautions
resulted in the necessary improvements being made.
