MANUFACTURE OF AERATED WATERS.
Owing to the increasing consumption of mineral waters, and the danger to
health incurred when these beverages are manufactured under unwrholesome
conditions, enquiries were instituted in November last, when it was ascertained
that no bottled aerated waters were then manufactured in the City. An
inspection was subsequently made of those places—chemists' shops, cafes,
&c.—where soda fountains and similar machines were in use, and on the
whole they were found to be conducted in a satisfactory manner.
In New York mineral water factories are only permitted when conforming
to a sanitary code of the Department of Health, and it would be well if a
similar prohibition obtained in this country, not only in the Metropolis, but
throughout the Kingdom.

while 53 new premises were added.
