gratings; (d) Openings in stall board, number and size; (e) Floor lights,
number and size; (f) Other lights, number and size; (g) What artificial
light is used.
9. How is Bakehouse ventilated? (a) Windows. No. and situation; (b) No. of
gratings in footway; (c) Openings in stall board. Describe; (d) No. of
chimney flues. Describe; (e) Flues or shafts other than chimney flues.
Describe; (f) Is any mechanical means of ventilation employed ? If so,
give description.
10. Receptacles for refuse, number and description.
11. Number of dough troughs, material, and if provided with covers, and whether
fixed or supported on wheels.
12. Number of benches, and whether fixed or on wheels.
13. Situation of storage cistern and draw-off tap for Bakehouse use.
14. Number of Ovens. (a) Brick; (b) Gas; (c) Other ovens.
15. Ventilation of Ovens, (a) Does proper outlet for sulphur fumes exist ? (b) Does
outlet for heat and steam exist at face of oven door ?
16. Is provision made for carrying off fumes of coal gas, when this is employed in
the baking process ?
17. Is there a flour room or store for flour in connection with the Bakehouse?
If so, give description; if not, where is flour stored ?
18. Number of persons employed; (a) Males; (b) Females. Describe hours of
work for both sexes, and whether day and night shifts are employed.

In response to the Notice issued 26 applications have been already received,
and in a number of cases owners' surveyors have met your Medical Officer of
Health at the premises and discussed the details of the work necessary to be
done, which will in due course be submitted to the Sanitary Committee for
their consideration.
I may here state that the Committee have decided upon a general course of
action, but have at the same time determined to deal with each case upon its
merits.
