The report of Professor Klein on these two samples, No. 18 and No. 19, is
as follows:—
St. Bartholomew's Hospital and College,
August 27th, 1902.
Re ICE CREAMS, No. 18 and No. 19.
These were received here on August 25th.
No. 18 contained few microbes. Guinea-pig inoculated with it developed slight
oedema extending over abdomen and chest; the animal was generally ill.
No. 19 contained numerous microbes. Guinea-pig No. 19 inoculated with it was
found distinctly ill in 24 hours, dead within 40 hours ; on post-mortem examination
extensive gangrene over abdomen, chest and neck; fibrinous pleuritis with copious
sauguineous effusion ; liver much hyperaemia, bowels inflamed. The disease was
caused by a highly virulent aerobic microbe belonging to the group of bacillus coli,
the morbid products and the blood swarming with the microbe.

Sample No. 20 was taken on the 27th August at Cutler Street, and found
wholesome.
Sample No. 21, from Eldon Street, satisfactory.
Sample No. 22, on the 28th August, from No. 20, Artillery Lane. This
sample was boiled on the 27th August, at 5 p.m., and frozen on the 28th.
Professor Klein reports as follows:—

Re ICE CREAMS.
No. 20 and No. 21, received August 27th.
No. 20.—Few microbes. Guinea-pig injected, quite well, no swelling.
No. 21.—Very few microbes. Guiuea-pig injected, quite well, no swelling.
Ice Cream No. 22, received August 28th.
Fair number of microbes. Guinea-pig injected, is very ill, will be dead in the
course of the day ; it has extensive oedema over the abdomen and chest.

I certify that the sample of ice cream No. 22 proved on examination—microscopic
and by experiment—to be poisonous and unfit for food of man.

The premises were at once visited, but the whole stock had been sold.
A further sample, No. 23, was taken at the same place on the 29th, and
found to be satisfactory.

Cultures show very few microbes; guinea-pig injected is quite well.
