Food Hygiene (Markets, Stalls and Delivery Vehicles)
Regulations, 1966
These Regulations lay down requirements as to food hygiene in
respect of markets, stalls and delivery vehicles. The principal
requirements relate to :—
Cleanliness of stalls and delivery vehicles.
Cleanliness of persons engaged in the handling of food and of
their clothing.
Hygienic handling of food.
Provision of water suppy and washing facilities.
Proper disposal of waste material.
Granting of certificates of exemption from certain requirements.
The principal difficulty in securing stallholders' compliance with
the Regulations related to proper screening to prevent contamination
of food.
Food and Drugs Act, 1955
Section 16(1) of this Act provides that no premises shall be
used for (a) the sale, or manufacture for the purpose of sale, of
ice-cream or the storage of ice-cream intended for sale or (b) the
preparation or manufacture of sausages or potted, pressed, pickled
or preserved food intended for sale, unless they are registered under
this section for that purpose with a local authority.
During the year 40 applications for registration under the provisions
of Section 16(l)(a) and 14 applications for registration under
the provisions of Section 16(7)(b) were submitted to the Council.
In all cases the premises were found to be satisfactory and registration
was granted.

Milk supply
Milk and Dairies (General) Regulations, 1959
These regulations require local authorities to keep a register of
all persons carrying on the trade of distributor in their district and
of all premises within their district which are used as dairies, not
being dairy farms.
