The average composition of the 260 samples of milk analysed
during the year and returned as genuine was as under:
Total milk solids 12.39 per cent.
Milk fat 3.64 per cent.
Non.fatty solids 8.75 per cent.
The average composition of the 40 samples of Channel Island and
South Devon milks was as under :
Total milk solids 13.57 per cent.
Milk fat 4.46 per cent.
Non.fatty solids 9.11 percent.
