The Supervision of Food.
previous year, when 2,703 animals were inspected prior to slaughter
and 7,069 carcases after slaughter.
The only organs found to be diseased in the carcases inspected
were a pair of lungs, affected with tuberculosis, and
12 cirrhotic livers, all in oxen. The diseased organs were
surrendered and destroyed.
