The average composition of the whole of the 967 samples of
Milk, received during the year and returned as genuine was as
under:—
Total Milk solids 12.42 %
Milk fat 3.65%
Non-fatty solids 8.77 %
Finally, we have to report that the adulteration detected
during the year 1938 amounted to 4.59 per cent. of the formal
samples, to 0.7 per cent. of the informal samples and 2.64 per
cent. of all samples submitted.
