MILK.
958 samples of milk were procured for analysis during the year.
27, or 2.8 per cent., were reported against as being adulterated
or not up to legal standard.
930 samples were purchased officially, of which 25, or 2.6 per
cent., were adulterated, and 28 samples purchased informally, of

Nine samples were found to contain added water, 15 were deficient
in milk fat, and one was deficient in milk fat and contained added
water.
Proceedings were taken in nine cases, and in 16 cases the Public
Health Committee, after considering the amount of adulteration
and the circumstances of sale, decided not to prosecute the vendors,
but to take further samples.
16 samples of milk were taken on delivery at various Public
Institutions situated within the Borough. All these samples were
genuine.
54 samples of milk were procured whilst in transit from the
farmer to the retailer, the samples being taken as the milk arrived
at various railway stations within the Borough, both at midnight
and mid-day deliveries. Six samples were reported against, and
in one case proceedings were taken against the farmer, who pleaded
warranty.
Three samples of milk were procured during the early morning
from wholesale dealers whilst delivering milk to the retailer. These
samples were genuine.
Five samples of milk were procured on delivery at private houses.
One sample was reported against.
140 samples of milk have been taken on Sundays, either in the
early morning or at mid-day. Three, or 2.1 per cent., were reported
against as being adulterated.
421 samples of milk were taken from milk vendors in the street
during the early morning (i.e., 5 to 7 a.m.), on week days, and of
these 16, or 3.9 per cent., were reported against.
