Before I proceed to comment upon the figures given in the
two Tables "A" and "B" the following general remarks upon
margarine may prove of service to the Committee when they come to
consider the figures of each sample in detail.
Under the Sale of Food and Drugs Acts, 1875 to 1907, margarine
is defined as "any article of food, whether mixed with butter or
not, which resembles butter and is not milk-lended butter."
It is, under the same Acts, required to contain not more than
16 per cent, of water, and the fat must not contain more than 10
per cent, butter fat. No official limitation is fixed for the nature
