Report of the Medical Officer of Health.
The following Table shows the number of samples taken in
each sub-district of the Borough, together with the average per
1,000 of population, the number of adulterations detected, and the
percentage of adulteration.

Samples of milk have been taken in course of transit or
delivery at the various railway stations and Public Institutions in
the Borough, and in this connection it is gratifying to note that
none of the samples so taken proved to be adulterated, although in
several instances, principally in the case of samples taken at
Public Institutions, the milk had proved to be of poor quality. In
every instance where a sample is taken at a Public Institution the
Analyst submits the figures of analysis and this is forwarded to
the public body concerned. In this way the Public Institutions are
not only protected against actual adulteration, but the responsible
officials are kept informed of the quality of the article which is
being supplied under their contracts.
This is a practice which should prove of great service to
public bodies, more particularly to those who adopt a standard of
their own in their contracts. For instance, such an one is the
Metropolitan Asylums Board, where the standard adopted for milk
is 3.3 per cent. of milk fat.
