Milk.—The record of milk adulteration in Islington is given in a
Table on page, 298 which shows that the average has been 9.9 per cent. This
figure is based on the analyses of 10,788 samples, which were purchased in the
streets from roundsmen, and at shops, or procured at railway stations when the
milk was in course of transit.
In 1913 600 samples of milk were submitted to the Public Analyst, of
which 45, or 7.5 per cent., were certified as adulterated. This figure is higher
than in 1912, when the analyses showed only 5.4 per cent.
