quantity, for whereas there were 62 in the borough in 1893, there were only 27
in 1913. Consequently and naturally, there has been a diminution in the
number of animals killed. The reduction since 1900, the first complete year
for which figures are available, has also been large, for whereas in that year
there were 57,267 animals slaughtered, only 31,305 were killed in 1913.

These decreases are very substantial, and clearly indicate, since meat is
eaten more than ever, that there must be a much larger trade now in
what is known as "dead meat" than in former years. It must be recollected
also that in past years there were some butchers who, having large slaughterhouses,
killed for persons outside the borough ; indeed, one of these, whose
premises are situate at Roman Road, who did a very large trade of this
character, has now ceased to do so.
