the grounds that the margin of difference in the quality is not so marked as is that of the
price. These foreign consignments are well inspected previous to exportation and also at
ports of arrival and wholesale markets, so that the inspection in the retail shops is chiefly
concerned in the detection of signs of decomposition, although outward appearances in this respect
are often misleading, as chilled and frozen meats soon become discoloured on section and
have a wet, sodden appearance, which in a dry atmosphere later becomes of a sullen dirty
appearance, too often aggravated by the amount of dust and dirt that have been blown on
to it from the dusty street, and this brings me to the question of whether open shop fronts
in butcher and provision trades should not be abolished, for the amount of filth thus deposited
on foodstuffs is to those who fully realise it simply appalling, and there is no doubt
that a compulsorily closed window would be a great benefit not only to the public generally,
but also to the trades concerned.
