Butter.—One sample of butter purchased in the form of pats at a
restaurant was found to contain about 34 per cent. of margarine. The
vendor was fined £1 0s. 0d.
Cheese.—Twenty-four samples of cheese were obtained during the year,
the majority of these being of the " wrapped " type, i.e., covered with
some form of metallic wrapping. All the samples of this type of cheese
proved to be satisfactory. Two samples of unwrapped cheese were found
