Bakehouses.—At the end of 1927 there were 77 bakehouses in the
City, of which 52 were underground. Four of the latter, (although
originally certified by the Council, fell into disuse for some years; two of
these were re-opened in 1927. During the year 238 visits of inspection
were made, and in all instances the cleansing which is required to be
done twice a year was carried out.
Inspection of Food.—Food exposed for sale has received regular
inspection by the food inspectors, who have carried out this work daily
including Sundays. The following table shows the nature and amount
of food voluntarily surrendered or submitted for destruction.

Certification of Food for Export.—Certificates enabling the export of
certain articles of food to Canada were granted in sixteen instances.
