The amount of the superior quality milk is less than in 1912, when
a considerable fall was noted.
Forty-three prosecutions were taken with regard to adulteration—
28 for fat abstracted, 10 for added water, 4 for both fat abstracted and
added water, and 1 for having 6'13 grains of boric acid per pint.
Twenty-six cautions were given to sellers whose milk contained less
than 5 per cent, of added water, or had less than 5 per cent, of fat
abstracted. Warranties were set up as a defence in 21 instances,
and were successful in 15, although there is good reason to believe that
several of the vendors habitually sell adulterated milk; 1 case was
withdrawn with the magistrate's approval—the defendant attributed
deficiency to natural causes, also stating that it was the first complaint
in twenty-five years.
Sunday Samples.—109 of the samples of milk were taken on 11
Sundays during the year; 9 (8-7 per cent.) were found to be
adulterated. One sample taken, being separated milk, was found to
contain 5 per cent, added water. The defendant was fined 8s. and
12s 6d. costs. Since Sunday sampling was instituted the number of
adulterated samples has fallen to half what it was at first.
Samples taken in course of Delivery—
(a) At Railway Stations.—58 samples of milk were taken on arrival
at Victoria and Charing Cross Railway Stations. Eleven were reported
of good quality, 25 fair, 18 poor and 4 adulterated:—Fat abstracted,
7 and 4 per cent. (2); added water, 4 and 3"5 per cent. (2).
(b) On Delivery at Shops, &c.—19 samples of milk were taken as it
was being delivered by wholesale firms to retail customers. Of these
samples, G were good, 8 fair, 4 poor, and 1 adulterated (17"6 per cent,
