Although the amount of legal adulteration is low, the quality of
the milk samples generally is not so good. The amount of "Poor"
quality milk is in excess of last year.
Thirty.four prosecutions were taken with regard to adulteration—
24 for fat abstracted, 7 for added water, and 3 for both fat abstracted
and added water. Thirty.two cautions were given to sellers whose milk
contained less than 5 per cent, of added water, or had less than 5 per
cent, of fat abstracted. Warranties were set up as a defence in
17 instances, and were successful in 16, although there is good reason to
believe that several of the vendors habitually sell adulterated milk;
1 case was withdrawn on the magistrate's suggestion—the defendant's
employ^ having been prosecuted for watering his master's milk and
sentenced to two months' imprisonment.
Sunday Samples.—78 of the samples of milk were taken on 9
Sundays during the year; 5 (6.4 per cent.) were found to be
adulterated. One sample taken, being skimmed milk, was found to
contain 37.2 grains boric acid per gallon. A cautionary letter was sent
to the vendor. In the six previous years the figures were 9.1, 10 6,
ll.0, 10.5, 8.6 and 12 per cent, respectively.
Samples taken in course of Delivery—
(a) At Railway Stations.—63 samples of milk were taken on arrival
at Victoria and Charing Cross Eailway Stations. Fifteen were reported
of good quality, 25 fair, 20 poor and 3 adulterated. Fat abstracted,
14 per cent. (1); 3 per cent. (2).
(b) On Delivery at Shops, &c.—29 samples of milk were taken as it
was being delivered by wholesale firms to retail customers. Of these
samples, 6 were good, 10 fair, 12 poor, and 1 adulterated (3.6 per cent,
