Bakehouses.—At the end of 1911 there were 14 above.ground and
69 underground in use. During 1912 one underground bakehouse was
demolished, and one new above.ground bakehouse was opened. All the
bakehouses were inspected, and cleansing carried out twice a year.
One baker was warned that he was not keeping the floors, &c., as
clean as he ought to do, and another for storing bread in the lobby to
a w.c. The ventilation of two old bakehouses was materially improved.
In the middle of August I received simultaneous information
from St. Pancras, Tottenham, Gloucester and Hornsey that in each
of these districts a case of typhoid fever had been notified. The
four men were all employed in a bakehouse in the City, and apparently
all had been infected on the same day. It is difficult to
ascertain by what means they became infected, but it seems probable
they must have eaten something in common about the 15th July. It
was suggested that they might have been infected by drinking water
from a cistern on the premises, but against this theory is the fact that
none of the other employes were affected, and there is nothing to show
how this cistern could have been contaminated with the typhoid
organism. No other person on the premises had previously any
symptoms resembling typhoid fever. Although some of the men m 1st
have been at work with the disease upon them, no illness has been
traced among the customers who have consumed the bread and pastry
made by them.
Certification of Food for Export.—As Certifying Officer for the City of
Westminster for all meat foods prepared or packed for export to several
foreign States, I have granted 173 certificates during 1912, 85 for the
United States, 12 for the Philippine Islands, 76 for the Argentine,
and 3 for Italy.
