Average Composition.—The average composition of all
samples of milk analysed during the period under review
equalled 3.35 per cent. milk fat and 8.73 per cent. solids not
fat. The average composition of the genuine samples alone
was 342 per cent. milk fat and 8.76 per cent. solids not fat.
In each case these figures are above the statutory limit.
Dyed Milks.—Seventy-nine, or 3.16 per cent., of the
milks analysed were found to contain colouring matter.
Preservatives. All the milk samples were examined
for the presence of preservatives, and in every case a negative
result was obtained.
Samples taken in course of Delivery.—Thirty-four
samples of milk were taken in course of delivery, as follows:—
Park Hospital, 3; St. Olave's Workhouse, 2; Catford Railway
Station, 4; Hither Green Railway Station, 1; Sydenham
Railway Station, 19; Forest Hill Railway Station, 4; and one
at a dairy. Two of these samples (Nos. 15 and 320) were found
to be below the legal standard.
The Sale of Milk Regulations, 1912.
It is satisfactory to record that in consequence of
representations which have been made from local authorities
(including your Borough Council) of the necessity for the
amendment of the standard for Skimmed or Separated Milk,
the Board of Agriculture and Fisheries on the 20th August,
1912, issued the Sale of Milk Regulations, 1912, and these
Regulations came into operation on the 1st day of September,
1912.
