Sophistication of Milk.—The particulars as to the genuineness or otherwise of the samples procured or purchased on Sundays, Weekdays, and at Finsburv Park Railwav Station are as follows:—

Dairy Show.— During the Dairy Show at the Agricultural Hall, Islington,
the Medical Officer of Health received complaints regarding very indifferent milk
sold there, the complainants stating that they were quite sure it was "skimmed
milk." The Food and Drugs Inspector was instructed to sample the milk. He
went to a stall over which were two notices, "Pure New Milk, 2d. per glass,"
and "Milk with cream added, 6d. per glass." The 2d. glass ot milk was purchased
and the contents analysed. There was only 1.37 per cent, of fat instead
of 3 per cent., that is, there was a deficiency of 54 per cent.
