tase test and that the value of this test has been amply
demonstrated. It may be remarked here that this year's
experience of the test has further proved its merits.
Condensed Milk.
Twenty-three tins of this article were analysed; all but
one complied with the requirements of the Condensed Milk
Regulations, both in regard to composition and the
equivalent pints " value. Five were sold as " full cream "
and eighteen as " machine skimmed."
The one sample previously referred to was sour and
the tin was blown; it was reported adulterated because it
was unfit for food. Examination of the rest of the vendor's
stock revealed no other faulty tins.
Cream.
Nine tins of cream which bore on their labels no claims
to richness, though all of them were described as thick,
were passed as genuine. Like the bulk of tinned cream
now marketed, they contained only 23 to 25 per cent, of
fat. A tenth sample had a label with the words " A highly
concentrated and rich cream," but it contained only 23.3
per cent. of fat. This was reported adulterated, the Public
Analyst expressing the opinion that the label was grossly
deceptive in spite of the fact that in another part a content
of 23 per cent. of fat was declared. A highly concentrated
and rich cream should contain not less than 50 per cent.
of fat.
Of eight creams sold loose or in cartons, all being
genuine, four were sold as " coffee " or " fruit " cream
and contained about 25 per cent. of fat; two were sold as
rich cream and contained 50.9 and 48.4 per cent. of fat,
and two which were sold without description contained
45.0 and 38.3 ner cent. of fat.
Cheese, &c.
Seven samples of cheese were analysed during the year,
two being adulterated. One of these was sold as Cheddar
cheese and in the opinion of the Analyst should have contained
at least 45 per cent. of fat on the moisture-free
