ice-cream:
The Register maintained under Sec, 16 of the Food & Drugs Act
1955 was extensively revised during 1961, and many smaller
premises at which ice-cream was previously manufactured, but
where production has now ceased, were removed from the Register
by the procedure authorised.
As a result there are now only 3 premises in the Borough where
ice-cream is manufactured. One is used solely for freezing the
product following delivery in bulk of the material after pasteurisation
in another area. This method gives rise to a certain
amount of trouble, and has required detailed investigation in
order to ascertain the point at which contamination occured.
Numerous samples of ice-cream have been regularly taken for
chemical and bacteriological examination, and the standard of ice
cream generally has been satisfactory.
Recently a new type of ice-cream, namely soft ice-cream, has
been introduced into the Borough. This method of manufacture
will require constant supervision owing to the numerous parts of
the machine which come into contact with the ice-cream necessitating
thorough cleansing and sterilization at the end of each day.

In the neighbourhood of the Smithfield Meat Market there are a
considerable number of wholesale butchers and offal shops, bacon
and provision warehouses, wholesale game, poultry and rabbit
shops.
