factories, wholesale bacon and provision warehouses, game and
rabbit shops and Public Cold Air Stores, all of which were regularly
inspected by the Meat Inspector.
A systematic examination of Caseous Lymphadenitis of imported
frozen carcases of mutton and lamb was carried out at the Cold Air
Stores : this often involved a 100 per cent. examination of the entire
consignment.
During the year the Meat Inspector examined 113,196 carcases
for this disease and of this number he condemned 86 whole carcases
and 4,277 parts of carcases. Another consignment of 192 sides of
mutton were examined and 5 sides were found to be diseased.
Sixty-seven bags of boneless Australian forequarters of beef were
examined for Onchocerciasis Gibsoni, and in about 80 per cent, of
the quarters the presence of the " worm nodule " was encountered.
Where the nodule was found, the affected area was removed.
The disposal and collection of unsound meat and food condemned
in the Borough continues to be collected by The Letchworth Bacon
Co., Letchworth, Herts., who render down the foodstuffs for
technical purposes.
Consignments of Continental and Scandinavian offals and
tinned hams were imported into the Borough, and in many instances
condemnation of the offals and tinned hams took place.
A total of 2,616 visits were made to the retail butchers' shops
and stalls during the year.
Forty-nine certificates for the export of sausage casings, meat
essence, etc., were issued, mostly to U.S.A. and the Continent.
Bakehouses.
The number remained the same as at the end of 1952; 15
basement bakehouses, and 4 above ground.
All were visited during the year.
Registered Food Premises (other than ice cream).
Seventy food premises were registered at the end of 1953. There
was one addition during the year. All were registered for the
preparation or manufacture of sausages, or potted, proved, pickled or
preserved meat, fish or other preserved food.
