Vendors or manufacturers of all samples where " Poor " and
" Unsatisfactory " results were recorded, were visited, and methods
of handling or manufacture closely examined to locate possible
reasons for those results.
In addition to these routine samples, a special series of samples
were taken in July and August from one manufacturer who supplied a
partly finished product to a firm in an adjoining borough, from
where complaints had been received. Over a period of about 10
days, every churn of " mix " made was sampled, with the following
results:—

The contents of all churns from which the unsatisfactory
samples were taken was re-processed in accordance with the Ice
Cream (Heat Treatment) Regulations before being released.
The outcome of the investigations into this factory resulted in the
voluntary closing down of the plant until alterations had been made
in certain equipment, and then the manufacturer concerned arranged
for " batch control " by an independent laboratory until the end of
the season. Satisfactory results were then consistently obtained.
The total number of visits to ice cream premises was 140.
Meat Inspection.
In the neighbourhood of the Smithfield Meat Market, London,
E.C.I, there are a considerable number of wholesale butchers and
offal shops, bacon factories, wholesale bacon and provision warehouses,
poultry, game and rabbit shops and Public Cold Air Stores,
all of which are regularly inspected by the Meat Inspector.
A systematic examination for Caseous Lymphadenitis of imported
frozen carcases of mutton and lamb was carried out in the
Public Cold Air Stores : this often involved an examination of
every carcase in a consignment.
During the year 127,615 carcases were examined by the Meat
Inspector, and of these 6,055 were found to be diseased to such an
extent that either the whole or part of the carcases was condemned.
