Protection of the Food Supply. —1,200 samples (of which 607
were informally taken) were analysed by the Public Analyst. Of
these 20 (12 informal) were certified to be adulterated, which gives
a percentage of adulteration of 1.67.
462 of the samples were of milk, the percentage of adulteration
among which was 1.08. There were 63 dairies (milk shops) registered
at the end of the year. 22 licences to sell tuberculin tested
milk and 33 for pasteurised milk were valid during 1944. 126 premises
were on the register for the sale of preserved foods and 33 as
fish shops. Street stalls from which food was sold numbered 85.
