were reported as adulterated, 1 of these samples being deficient in
milk fat and 12 containing extraneous water. The percentages of
extraneous water found in the adulterated samples were small,
ranging from 5 per cent, to 1 per cent., whilst the deficiency in milk
fat in the one sample so reported against amounted to 40 per cent.

In the 5 years 1926-30, and in 1931 and 1932, the percentage of adulterated (formal) samples of milk was as under:—

A considerable proportion of the milk supply of London is
received at Clapham Junction and the Nine Elms Goods Station
of the Great Western Railway, and samples are systematically
taken on the arrival of the milk at these two Stations. Such
samples are included in the return on page 86.
The average composition of the 745 samples of milk (all formal),
excluding separated milk, reported as genuine, proved to be as
under:—
Total milk solids 12.32 per cent.
Milk fat 3.54 „
Not-fatty solids 8.78 „
The content of milk fat in these 745 samples ranged as follows:
4 per cent, and over 54 samples or 7.2 per cent.
