Chinese Egg Albumen
During the year, information was received from the Ministry
of Health that certain samples of Chinese Egg Albumen (dried egg
white), used in the bakery trade in connection with the manufacture
of meringues and in the icing of cakes? had been found to contain
Salmonella organisms, which are largely responsible for food
poisoning.
An appropriate statement was sent to bakers in the borough
informing them that this commodity could only be used in the
manufacture of products which were subjected to a sterilizing
temperature of 212°F. for ten minutes.
Samples were taken from the stocks of egg albumen and similar
substances held by Kensington bakers, but no organism of the
Salmonella group were isolated in any of the samples.
