INSPECTION AND SUPERVISION OF FOOD
Milk.
Three hundred and forty-four samples of milk were
submitted to the public Analyst during the year and all
were found to be of genuine composition.

The following table shows the average percentages of milk fats and non-fatty solids of the samples taken each month:

Legal Minimum Standards:- Milk fats - 3.00. Non-fatty solids - 8.50.
Milk (Special Designations) Regulations. 1936/1946.
The above regulations provide for licensed dairymen to
use the designation tuberoulin tested, accredited, or pasteurised,
in connection with the sale of milk.

During the year, particulars of licenses granted were as follows:-

Twenty-six samples of tuberculin tested milk were submitted
for examination, and of these 16 failed to pass the prescribed
tests.
Twenty-three samples of tuberculin tested (pasteurised) milk
and 59 samples of pasteurised milk were submitted for examination.
Four of the tuberculin tested (pasteurised) samples and two of
the pasteurised milks failed to pass the prescribed tests.
