which came into force on January 1st, 1900, this proof of
guilty knowledge will be no longer required and the issue
will be somewhat simpler. The issue then will simply be
whether or not the use of gypsum is necessary in the
brewing of vinegar? unless that can be proved by the
defendant, the law will assume a guilty knowledge and
"the defendant will be liable . . . unless he proves
to the satisfaction of the Court that, when he gave the
warranty, he had reason to believe that the statements or
descriptions contained therein were true." I have no
doubt that some of these old firms still go on with the
use of gypsum in perfectly good faith. But if modern
firms can brew a perfect vinegar without gypsum, it is
clear that pressure will have to be used in order to bring
the old firms into line with modern scientific manufacture.
