Milk.
Of the 697 formal samples (including one of skimmed milk)
37 or 5.3 per cent were certified as adulterated. Twenty-eight
samples were reported against as being deficient in milk fat, 6 as
containing extraneous water, and 3 as containing colouring matter.
The greatest deficiency in milk fat amounted to 22 per cent., and
the highest percentage of extraneous water was 12.5 per cent.

In the 5 years 1922-26 and in 1927, the percentage of adulterated formal) samples of milk was as under:—
