Milk.—532 samples of milk were examined, of which 181 were
bought on Sundays, and 231 on other days of the week, while 120
were procured in course of transit at railway stations.

In the following table will be found the particulars of the milk taken during each quarter on sundays, on week-days, and at the railway stations.

Sunday Milks.—Of the 231 samples, 27, or 14*9 per cent, were
found to be sophisticated. The analyses of these milks showed
that they contained the undermentioned parts.
Somerset House Standard.
Fat 3.50 per cent, as against 3.o per cent.
Solids not Fat 8.49 „ „ 8.5 „
Total Solids 11.99 „ „ 11.5 „
Here we see in these milks that, although 14.9 per cent, of the
samples had been interfered with, they contained 19.6 per cent,
more fat than the "standard" laid down by Somerset House, while
the " solids not fat " are almost identical with the figures of the
official analysts.
Week Day Milks.—These 233 milks, like those taken on Sundays,
were purchased from the vendors on their rounds, or were bought
