Inspector Young has made a full report on his work during the
year, which I herewith append. It is an interesting document and
shows that he has performed excellent workâwork, too, which I
may add had to be carried out in the early morning as well as
late at night.
MEAT INSPECTOR'S REPORT.

Dear Sir,
I have the honour of submitting to you my report for the nine months
ending 31st December, 1899.
I find that there are at present 227 butchers' shops (including ham and beef
shops), 7 meat stalls, and 3 preserved meat factories, within the Parish. Nearly
50 per cent. of the meat sold in these shops is refrigerated meat. Of the other 50
per cent., part consists of home-killed English and Scotch, while the remainder is
obtained from foreign animals killed at Deptford, Birkenhead, etc. I observe that
there are no low class butchers' shops within the Parish, such as are generally found
in the poor localities of provincial towns. Thus the meat exposed for sale is of
good quality, and where the butcher kills his own animals it is of superior quality.
I am pleased to report that the butchers have received me and submitted to the
periodical system of inspection in a kindly spirit, being always willing to supply
any information desired, and even, on one or two occasions, asking me to come
and examine a carcase which they had some doubt about. The Orders issued
